Baked pork chops with broccoli and garlic

Ingredients:

  • 4 bone-in or boneless pork chops (about 1-inch thick)
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 3 garlic cloves (minced)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional, for a crispy topping)
  • Fresh parsley (chopped, for garnish, optional)

Instructions:

1. Preheat Oven:

  • Preheat your oven to 375°F (190°C).

2. Prepare the Pork Chops:

  • Pat the pork chops dry with paper towels. Season both sides with salt, pepper, dried thyme, dried rosemary, and paprika.

3. Sear the Pork Chops (Optional):

  • For added flavor, you can sear the pork chops before baking. Heat 1 tbsp olive oil in a skillet over medium-high heat.
  • Add the pork chops and cook for 2-3 minutes per side, or until browned. Transfer to a baking dish.

4. Prepare the Broccoli:

  • In a large bowl, toss the broccoli florets with 1 tbsp olive oil, minced garlic, salt, and pepper.

5. Assemble the Dish:

  • If you seared the pork chops, place them in a baking dish. If not, simply place the seasoned pork chops in a baking dish.
  • Arrange the seasoned broccoli around the pork chops in the baking dish.

6. Bake:

  • Bake in the preheated oven for 25-30 minutes, or until the pork chops are cooked through and reach an internal temperature of 145°F (63°C). The broccoli should be tender and slightly crisped.
  • If using Parmesan cheese, sprinkle it over the broccoli during the last 5 minutes of baking.

7. Finish and Serve:

  • Let the pork chops rest for a few minutes before serving.
  • Garnish with chopped fresh parsley if desired.
